Most aluminum pots and pans don’t actually have aluminum in the cooking surface. Stainless steel is used for where the food is cooked. The aluminum is on the outside of the pot or pan because of its conductivity. Inside the pot and pan, the stainless steel is used with the anodized coating to create a cooking surface that is safe.
Even though there has been some worry about aluminum cookware, most cookware does not use aluminum for the actual cooking surface. When buying cookware, do not be afraid to use aluminum. The anodized aluminum cookware is safe and still the best cookware available.
