This delicious salmon salad recipe is super simple, really refreshing and totally delicious. It makes a fantastic easy lunch or side dish and you can even prepare it the night before and take as a grab and go lunch.
For this recipe you can use fresh lemon juice instead of adding a dressing or we have a great salad dressing recipe that complements the flavours perfectly.
Lima bean recipe with fluffy Horse-Radish Dressing, made from freshly ground horse-radish and some whipped cream. Made extra zesty Tabasco sauce.
If you want to add a different dimension to this salad, add in some tahini. The nuttiness of the tahini really compliments the soft flavor of the cucumber and balances out the acidity from the lemon.
This salad can be made with any fresh vegetable you want. I have used squash and a variety of different types of peppers from banana peppers to little red cherry bombs. Avocado is really good too.
