You had the choice of carrot cake or brownies in this week’s NutriPic – and brownies won the vote, so here’s your healthy, chocolatey and delicious recipe.
1/2 avocado, peeled and chopped
5 tbsp. cacao
110g/4oz maple syrup
Juice from 1/2 orange
zest from 1 orange
40g/1.5oz mixed nuts
2 tbsp. chia seeds
200g/7oz ground almonds
1 x 400g/14oz can kidney beans, drained
Optional - honey or maple syrup to top
1Preheat the oven to 180C/360F.
2Place all the ingredients (except for the nuts) into a food processor and blitz until fully combined.
3Add to a mixing bowl, then mix in the nuts.
4Line a baking tray with parchment paper, then add the mixture on top.
5Bake for 30-35 minutes.
6Remove from the oven and sprinkle with more orange zest and honey/maple syrup to serve.
