Chocolate truffles are a special dessert to me, as my mum always used to make them.
1/2 c. Unsalted butter
2 1/3 c. Powdered Sugar
1/2 c. Cocoa
1/4 c. Heavy cream
1 1/2 tsp. Vanilla
1In a large bowl cream butter.
2 Combine cocoa and 2 1/2 cups of powdered sugar.
3Add cream and vanilla to the cocoa mixture and stir everything into the cream butter.
4Blend well and let it chill until firm.
5Shape little amount of mixture around desired center and roll into small balls.
6Sink into desired coating until covered.
7 Let it chill.
Centers: whole almonds, after-dinner mints, pecan or walnuts
Coatings: powdered sugar, crushed nuts, coconut
