Chopped Tuna Salad

This salad can be made with any fresh vegetable you want. I have used squash and a variety of different types of peppers from banana peppers to little red cherry bombs. Avocado is really good too.


5 oz. tuna, packed in water, drained

1/3 c. chopped cucumber

1/3 c. halved cherry tomatoes

1/3 c. chopped celery

1/4 small onion cut in thin 1" long slices

1/4 c. crumbled feta

1 c. fresh greens, chopped


4 tsp. olive oil

2 tbsp. fresh lime juice

1 clove garlic, minced (I like to use a zester)

1/4 tsp. celery seed

1 tsp. honey

1/2 tsp. black pepper

pinch of salt


Mix tuna, vegetables, feta and lettuce.

Whisk together ingredients for dressing and drizzle over salad.
