0 Full-screen Couscous Salad March 19, 2017 One of my favorite salads. This couscous salad is delicious and on top of that, i'ts easy to prepare. Ingredients 1 c. Water 3/4 c. Quick-cooking couscous, uncooked 1/2 c. Dried tart cherries 1/2 c. Carrots, coarsely chopped 1/2 c. Cucumber, chopped and unpeeled 1/4 c. Green onions, sliced 3 tbsp. Balsamic vinegar 1 tbsp. Olive oil 1 tbsp. Dijon-style mustard Salt Pepper Directions In a saucepan bring water to boil and stir in couscous. Remove from heat and let the couscous stand covered for 5 minutes. Fluff with a fork. Uncover and let it cool for about 10 minutes. In a second bowl combine the cooked couscous, carrots, cucumber, dried cherries and green onion. Mix well. In a container combine olive oil, mustard and vinegar. Mix well and pour it over the couscous mixture. Stir well to coat all ingredients. Season with pepper and salt.
