A simple breakfast egg casserole that is satisfying and very easy to make.

Add to favorites:


12 eggs

½ tsp salt

½ tsp black pepper

1 cup milk

8 oz turkey sausage

2 cups frozen tater tots

2 cups grated cheese (cheddar, mozzarella, provolone, swiss, Monterey jack, etc...whatever you like)


1Cook (or defrost - if using frozen pre-cooked turkey sausage links) and crumble the meat.

2Preheat oven to 350 and oil an 11 x 15 x 2 baking pan.

3In a medium sized bowl, whisk eggs, salt and pepper.

4Add milk and whisk well.

5Add meat, tater tots, and cheese(s), and stir well.

6Pour into pan and bake for 45 minutes, or, until the casserole is bubbly and set in the middle, and a browning at the sides and in some places on the top.

7Let stand for 10 minutes before cutting into it.

8Casserole will keep for 1 week, if store in an airtight container in the fridge.

9***you can also refrigerate the casserole overnight (covered in foil) prior to baking. It may need a few more minutes to cook.
