1 small onion, thickly sliced

2 Cloves

1 Bay leaf

2 1/2 cups Milk

1 cup double cream

16 oz. unskinned cod fillets

8 oz. undyed smoked cod fillets

4 Eggs

3 1/2 oz. Butter

1 1/2 oz. plain flour

5 tbsp. chopped flat leaf Parsley

pinches freshly grated Nutmeg

44 oz. peeled floury potatoes, such as King Edwards or Maris Piper

1 egg yolk

sea salt and freshly ground freshly ground white pepper


1Place onion, bay leaf, milk, cream and cod and smoked cod in a pan. Now boil all the ingredients until well cooked. Take out the fish in a dish and pour all the boiled juice in as jug.

2 Let the fish cool down, once it gets cool then remove its skin and all the bones, making large flakes of the fish. Now spread it over a thin ovenproof plate/dish.

3Boil the eggs for about eight minutes, but they should be hard enough and let them cool. Make slices of the boiled eggs and place them over the fish plate.

4Melt the butter and add flour to it and cook for a minute. Now add this mixture to the boiled juice of fish that was poured into the jug. Cook it for 10 minutes until the juice gets well boiled.

5Take off the boiled mixture from the flame and add parsley, nutmeg, salt, and white pepper.

6Pour the mixture into a serving bowl and let it cool down. Place it in the fridge for an hour.

7Now boil potatoes and mash them adding butter and egg yolk. Also, add white pepper and salt. Also, pour the milk into it and mix it well until a smooth paste is ready.

8In a preheated oven of 390F spoon over the paste. and using a fork make a design over it. Bake the potato paste for 40 minutes and take it out of the oven once golden brown.
