Great Greek pizza recipe, without cheese. Instead the cheese, we use tzatziki sauce. Note that you can always prepare it the way you like and add your own topping like feta cheese.
1 package of chicken breast
Roasted garlic hummus
8 oz. of Greek yogurt
1 tablespoon dried oregano
2 cloves of garlic minced
2 plum tomatoes lightly chopped
Iceberg lettuce shredded
flat bread, either a pita or pizza crust
1Combine yogurt, lemon, garlic, oregano, and salt and pepper to taste.
2Put the chicken in a ziplock bag and pour mixture on the chicken, shake it up and marinate for at least 30 minutes.
3Cook chicken in a medium skillet, 4 minutes each side ( depending on thickness ) and cut into bite side pieces.
4Toast flat bread in a pan or oven.
5Spread hummus on toasted flat bread, and some shredded lettuce, some of the chicken, tomatoes and drizzle tzatziki sauce on top.
Note: You can also add other toppings if you desire like feta cheese and onion.
