Sauteed ground beef, onion, green pepper and garlic combined with kidney beans and stewed tomatoes. Seasoned with chili powder hot pepper sauce, cumin and oregano.
2 Tablespoons Extra Virgin Olive Oil
1 Pound Ground Beef
1 Onion, finely chopped
1 Green Bell Pepper, finely chopped
3 Cloves Garlic, finely chopped
1 Can Red Kidney Beans, (15 ounces), drained and rinsed
1 Can Black Beans, (15 ounces), drained and rinsed
1 Can Stewed Tomatoes, (14 ounces)
1/4 Cup Tomato Paste
1/4 Cup Honey
1 Tablespoon Chili Powder
1 Teaspoon Ground Cumin
1 Teaspoon Dried Oregano
1/2 Teaspoon Salt
1/4 Teaspoon Hot Sauce
1Heat the oil in a large pot or a Dutch oven.
2Add the beef, breaking up the meat while cooking.
3Cooking time usually takes about 5 minutes, or until browned.
4Add the onion, bell pepper and garlic and cook for an additional 5 minutes or until the vegetables are soft.
5Add the beans, tomatoes, 1 cup water, tomato paste, honey, chili powder, cumin, oregano, salt and hot sauce.
6Simmer covered 2 hours.
7Top with garnish of choice.
1Serve chili topped with shredded cheddar cheese and sliced green onions, if desired.
