Lentil Salad

Great recipe for lentil salad, worth to give it a try. I make it almost every week, can't resist the taste.

Add to favorites:


3 c. Cold water

1/2 c. Lentils, dried

1/2 tsp. Salt

1/2 c. Celery, diced

1/2 c. Red bell pepper, diced

1/3 c. Mint sauce

1/4 c. Red onion, diced

1/4 c. Flat-leaf parsley, chopped

2 tbsp. Olive oil

1 Clove small garlic, chopped

1/4 tsp. Dried oregano, crushed

4 Lettuce leaves


1In a saucepan combine lentils, water and salt. Bring it to boil on high heat. Stirring occasionally, cook it until lentils are tender (15 minutes). Drain and put lentils under cold water.

2In a bowl combine cooked lentils, celery, bell pepper, onion, parsley, mind sauce, garlic, oregano and olive oil. Mix well and cover.

3Refrigerate for about 30 minutes. Serve over lettuce leaves.
