I found this recipe a while back in a cookbook and modified it for my needs. I really think i improved the taste of Mediterranean couscous salad and it’s is just perfect now.
1 1/2 c. Water
1 c. Uncooked couscous
3 tbsp. Lemon juice
1 tbsp. Olive oil
1 tbsp. Cider vinegar
2 tsp. Honey
3 c. Fresh baby spinach leaves, washed and stems removed
1/3 c. Roasted red bell pepper, chopped
4 oz. Crumbled Feta Cheese
3 tbsp. Toasted pine nuts
1In a saucepan, heat water over medium heat for 3-4 minutes, to bring it to a boil.
2Stir in couscous and cover.
3 Remove from heat and let it stand for 5 minutes.
4Fluff with fork.
5 Transfer to a bowl and let it chill for 10 minutes.
6In the meantime, in a small bowl combine olive oil, vinegar, lemon juice and honey.
7Add spinach leaves, red bell pepper, feta cheese, pine nuts and the dressing mixture to couscous.
8 Toss softly and serve immediately or refrigerate for 2 hours.
