Potato-Mushroom Pie Recipe

Dough Ingredients:
 1 glass milk
 1 egg
 1 teaspoon yeast
 2 teaspoons sugar
 1 teaspoon salt
 50 g butter
 2 lb (1 kg) flour
Filling Ingredients:
 1 lb. (1/2 kg) mushrooms (any kind)
 6 potatoes
 1 onion
 salt
 black pepper

Dough Directions:

Before making dough take half glass milk, warm it up, pour into a bowl, add two tablespoons flour, yeast, salt and sugar keeping to the proportions above. Mix it all and leave in a warm place for 20 minutes thus making sponge dough.

Meanwhile, melt the butter, beat the egg, separate the yolk. Keep the egg white, you will need it later.

Now pour the rest of the milk into the sponge dough, add the melted butter and the yolk. Mix it all and start putting in flour. It’s not necessary to put it all at once, you should see and stop when the dough is stiff enough, then you should brake it with hands until it stops sticking.

Leave it to rise in a warm place for an hour.

Wash the mushrooms, peel the potatoes and the onion. Cut the mushrooms and put them into a skillet to stew till all the moisture goes off.

Dice the onion and potatoes, mix them with the mushrooms, add salt, pepper to your taste. The filling is ready.

Assembling Directions:

The dough is risen by now.

Cut it into two equal pieces. Roll out one of them and place onto an oily baking sheet. Evenly lay out the pie filling onto the dough sheet. Roll out another piece and cover the filling. Stick the dough edges together and smear the pie with beaten egg white.

Send the pie to preheated oven and cook for 20-30 minutes at 300 ºF (150 ºC).
