1Heat oven to 170F. Once there, turn it off, but leave the light on.
2In a Bosch or Kitchen Aid mixer with a dough hook attachment, combine ¼ cup warm water, yeast, and sugar. Let sit 10 minutes for the year to proof.
3Add remaining ingredients to the bowl and mix until smooth (about 3 minutes).
4Oil and medium sized bowl and put the dough into it, and cover it with a clean towel.
5Place dough into oven and allow to rise for 1 hour
6Punch dough down, form into a semi-flat round and put onto a baking sheet or stone, and put it back into the warm oven to rise for another hour.
7Bake at 375 for 25-30 minutes. Spray your bread with water before putting it into the oven, and the once ever 10 minutes (this will give it a crunchy crust)
8Serve with olive oil and crushed pepper dipping oil.
