Russian Pirozhki

Russian Pirozhki Recipe

Dough Ingredients:
 1 teaspoon sugar
 1 teaspoon salt
 1 teaspoon vegetable oil
 1 teaspoon yeast
 ½ liter milk
 6 cups flour
Filling Ingredients:
 17 oz (500 g) cabbage
 2 carrots
 1 onion
 1/2 teaspoon dry basil
 salt and black pepper to taste
Assembling Ingredients:
 1 egg

Dough Directions:

Warm up the milk and pour it in a large bowl.

Add sugar, salt, vegetable oil and yeast.

Stir until the ingredients totally dissolve in the milk.

Pour in the flour slowly.

Knead the dough thoroughly until it almost stops sticking to your hands and to the bowl.

Leave it for two hours to rise.

As soon as it rises first time, knead it and leave for another hour to rise again.

While your dough is rising, start cooking the filling for pirozhki.

Filling Directions:

Chop the cabbage and send it to the preheated skillet.

Add some water, cover the skillet and leave the cabbage to stew over low heat.

Grate the carrots and add them to the cabbage.

Stew the vegetables for 10 min.

Shred the onion and add to the cabbage as well.

Stew for 10 min more.

Add salt, black pepper and basil. Mix all well.

Let the filling cool completely.

Assembling Directions:

Flour the table area where you're going to make pirozhki.

Divide the dough into small round-shaped pieces.

Pat each piece slightly to make it thinner.

Put the filling on every patty.

To close piroshki, bring the dough edges up and pinch them together to seal.

Pat the pirozhki a bit on the tops and place on the greasy baking sheet keeping 2 inches distance between them.

Beat the egg in a small bowl.

Egg every pirozhok with a special brush.

Preheat the oven to 390ºF (200 ºC).

Bake the pirozhki for 20 minutes until golden brown.
