This delicious salmon salad recipe is super simple, really refreshing and totally delicious. It makes a fantastic easy lunch or side dish and you can even prepare it the night before and take as a grab and go lunch.
For this recipe you can use fresh lemon juice instead of adding a dressing or we have a great salad dressing recipe that complements the flavours perfectly.
Prep: 5 mins
80g/3oz smoked salmon
4 slices cucumber
2 tsp. pumpkin seeds
Juice from 1 lemon
100g/3.5oz baby red leaf, spinach, rocket, red chard
Grate the carrot.
Slice the cucumber lengthways with a potato peeler.
Slice the smoked salmon.
Add all the ingredients to a plate and serve with fresh lemon juice or our sesame salad dressing.
