Start heating pan while you are preparing your batter, you want your pan to be good and hot, I cook mine at a little lower temp than I cook regular flour pancakes as these pancakes take a little longer to cook through.
In a medium sized bowl, mix all the wet ingredients except egg whites. In a separate bowl whip the whites until stiff peaks form, set aside.
Mix together dry ingredients, add to wet ingredients. Gently fold in whipped egg whites. Now you are ready to go!
Pour batter onto hot buttered griddle, and cook on each side for a couple minutes. I kept the pancakes on a ceramic plate in the warm oven and made some sausage and eggs to go along with it. I hope you like them as much as we do!
