Apple-Rhubarb Crisp Recipe

Ingredients

 3 cups diced apples.
 3 cups diced rhubarb
 1/2 cup of sugar
 2 tbsp. all purpose flour
Topping:
 1/2 cup of whole wheat pastry flour
 1/2 cup rolled oats
 1/4 cup of brown sugar
 pinch of salt
 1/2 stick of butter, cold & cut into pieces

Directions

Preheat oven to 350*. Grease a pie plate or 9 inch baking dish with butter. Combine apples, rhubarb, sugar, flour and cinnamon in a bowl and then pour into pie plate or baking dish.

For the topping, in a separate bowl, combine flour, oatmeal, brown sugar and salt.

Work in butter with your fingers until mixture is well combined and the mixture sticks together when squeezed.

Mound the topping over apple-rhubarb mixture. Bake for 45-60 minutes or until the fruit bubbles up and over pie plate or baking dish.

Serve with ice cream or whipped cream.
