Arugula Peach Salad Recipe

Ingredients

 2 large ripe Peaches
2 tablespoons Fresh Lemon Juice, divided
 6 tablespoons Extra-Virgin Olive Oil
 1 1/2 tablespoons Whipping Cream
1/3 cup finely chopped Fresh Chives
12 cups Arugula (about 6 ounces)

Directions

1

Wash your peaches, rubbing them to remove any fuzz.

2

Cut them in half and remove the pits.

3

Next thinly slice the peaches and place them in large bowl.

4

Add 1/2 tablespoon lemon juice; toss to keep them fresh.

Vinaigrette:
5

Whisk the other 1 1/2 tablespoons of lemon juice and the olive oil in small bowl. Now add the cream, then chives and whisk again.

6

Season with salt and pepper. Add arugula to bowl with peaches. Add dressing and toss. Season with more salt and pepper, if desired, and serve.

7

You could top this with your favorite nuts like slivered almonds or walnuts. In my photo I used sunflower seeds and a Gorgonzola cheese crumbled on top. Also if you don’t have Arugula, Spinach works just as well.

Enjoy!
