Mix wet and dry ingredients in separate bowls.
Add wet ingredients to dry ingredients and stir until incorporated.
Scoop 1/4 cup of batter onto a heated, greased griddle and cook like you would any other kind of pancake.
Sometimes while the batter sits for a few minutes the coconut flour in the batter will absorb some of the liquid. I keep coconut milk handy to splash a little into the batter to give it the right consistency and then give it a good stir before I start the next batch cooking.
