Cut butternut squash in half, scoop out seed and pulp and either cover and cook in microwave for six minutes on high, or butter and cook in the oven in a glass dish for 35 minutes at 400 degrees.
When it’s done, scoop out the flesh of the squash into a blender, add coconut milk, vanilla and a dash of cinnamon. Blend until smooth.
Put the pureed squash into bowls and top with a pat of butter, cinnamon, nuts, coconut flakes, and some more coconut milk or however you like it! Serve hot, it’s yummy!! Enjoy!
