Cheese Grits and Shrimp Recipe

Ingredients

 5 cups water
 1 cup grits (you can use instant if you prefer, but the water to grits ratio may be different)
 2 Tbsp olive oil
 1 large shallot, diced
 1 clove garlic, minced
 1 lb shrimp, shelled a devained
 1/4 – 1/2 cup dry white wine
 Juice of 1/2 a lemon
 Salt
 Pepper
 1 cup cheddar cheese (I prefer extra sharp)
 1 Tbsp Worcester sauce
 1 tsp of Tabasco sauce
 Parsley for garnish

Directions

Grits:

Bring 5 cups of water to a boil.

Add two pinches of salt and slowly stir in the grits.

Bring the grits down do a simmer and stir often, but not necessarily constantly for about 20 minutes.

Stir grits and add shredded cheese slowly.

Add Worcester sauce, Tabasco sauce, salt and pepper to taste.

Let grits rest to thicken up for about 5 minutes.

Shrimp:

Meanwhile, in a large sauté pan, heat the olive oil on medium heat.

Add the shallots, and cook until tender (about 2-3 minutes).

Add garlic and cook until fragrant (about 30 seconds).

Add shrimp, wine, some salt (about 1 tsp) and pepper (a couple pinches).

Cover and cook until shrimp is pink.

Serve shrimp over grits. Drizzle some of the shrimp pan juices over the dish.

Garnish with some chopped parsley if desired.
