Chili-Rubbed Halibut Kabobs Recipe

Ingredients

 2 pounds (six 6-ounce fillets) Alaskan Halibut, cut into 1-inch pieces
 8 Wooden Skewers
 1 tablespoons Chili Power
 4 tablespoons Italian Salad Dressing
 2 cloves Garlic, crushed
Avocado Salsa:
 1/2 Avocado, 1/4 inch dice
 1 tablespoon Olive Oil
 1 large Tomato, diced
 1/2 Red Onion, diced
 1 Jalapeño Pepper, seeded, finely diced
 juice of 1/4 Fresh Lime
 1 clove Garlic, minced
 2 tablespoons Fresh Cilantro, minced
 Salt and Pepper, to taste

Directions

In a large bowl, combine chili powder, Italian salad dressing, and garlic.

Add halibut to marinade. Stir to coat. Refrigerate 1-2 hours

Thread 5 -6 halibut pieces on each of the 8 skewers.

Preheat gas, charcoal or indoor grill.

Grill halibut kabobs on lightly oiled grill or grill rack, approximately 8 minutes (to the desired doneness).

Serve kabobs with avocado salsa.

Avocado Salsa:

In a serving bowl, combine half the lime juice, jalapeño chili pepper and red onion.

Stir in tomato, cilantro and avocado.

Sprinkle with 1 tablespoon olive oil.

Season with salt and pepper. Add more lime juice if necessary.

Taste, add more lime juice, salt, and pepper as necessary. Hold aside, chilled.
