In a bowl, marinate chicken with soy sauce, cooking wine and a pinch of salt. Set aside for 15 minutes.
Heat oil in skillet to medium high, put marinated chicken and fry it for 3 minutes or until done.
Heat some cooking oil in another skillet and put cashews, diced Carrot and diced Celery and cook them on medium low heat for 1 minute.
After this add chicken, sugar, oyster sauce, soy sauce, sesame oil and chicken broth. Cook them for nearly half minute on medium heat and its done.
