Ingredients
Directions
Preheat oven to 350 and grease a 10x15x2 pan.
Mix all dry ingredients into a heat safe bowl and set aside.
Melt the 8 oz of butter in a medium sided sauce pan.
Add coca cola, buttermilk, and dark vanilla and heat well - but do not let it boil. (you can make buttermilk by putting ½ Tbl of lemon juice of vinegar into a measuring cup and filling it the rest of the way with milk)
Once wet mixture is well heated, pour it into the dry mix and stir with an electric beater until mostly smooth.
Add in the two eggs and beat the mix again until all the lumps are gone.
Pour batter into prepared pan and bake for 20-23 minutes. A toothpick inserted into the middle of the cake will come out moistly clean, with only a few crumbs.
Cool cake completely before icing it.
Melt your 4oz of butter in a medium sized sauce pan over low-medium heat.
Add the cola, cocoa, vanilla, and two cups of powdered sugar and mix until smooth.
Add the remaining 3 cups of powdered sugar one cup at a time - mixing well between each one.
Take icing off the heat, and let is sit while the cake cools.
Once cake is cool - pour icing over it, and spread it out. The cake MUST be completely cool or your icing will turn quite runny.
Covered on the counter, this cake will keep for 1 week - if it lasts that long!
