Weigh, peel and slice the carrots into 1/4 inch rounds or diagonals, then soak in a bowl of water and drain when you're ready to boil them.
Bring a pot of water to a boil over high heat, then add in the salt and carrots, and boil for about 3 - 5 minutes for firm carrots, or longer according to your preference.
When cooked, drain the carrots in a colander and discard the cooking water.
Wipe the pot dry with a paper towel and then melt the butter over medium heat.
Add in the honey and stir to combine well.
Add in the cooked carrots and toss to coat evenly.
Transfer to serving bowl and serve.
You can also arrange glazed carrots on a plate along with the main meal.
