Easy Chocolate Cake Recipe

Ingredients

CAKE:
 ¾ cup flour + 2 Tbl* (OR if you use spelt flour - leave out the extra 2 Tbl)
 ¼ cup sugar
 6 Tbl cocoa powder
 ½ teaspoon baking powder
 1 teaspoons baking soda
 ½ teaspoon salt
 ⅛ tsp cinnamon
 ½ cup buttermilk
 ¼ cup olive oil
 1 egg
 1 teaspoon vanilla extract
 ½ cup water
FROSTING:
 10 Tbl unsalted butter softened
 1.5 cups confectioners' sugar
 6 Tbl cocoa powder
 2 Tbl heavy cream
 1 teaspoon vanilla extract
 ¼ teaspoon salt

Directions

FOR THE CAKE:

Pre-heat oven to 350 and oil an 8x8 pan with olive oil.

Mix together all the dry ingredients into a medium-sized bowl and set aside.

Combine all your wet ingredients into another medium sized bowl and whisk until smooth.

Pour the wet into the dry and whisk together until the batter is smooth - it will be thin.

Pour the batter into the pie pan and bake for 18-21 minutes - an inserted toothpick will come out with a few crumbs.

Allow cake to cool while preparing the frosting.

FOR THE FROSTING:

In a medium sized bowl, cream the butter using a whisk or electric mixer.

Add all other ingredients and stir together carefully - until all is smooth.

Once it's cooled, frost the cake and cut into 16 pieces.
