Flourless Chocolate Cake Recipe

Ingredients

Cake Ingredients
 8 ounces unsweetened chocolate
 8 ounces semi-sweet chocolate
 1 stick butter
 9 eggs, separated
 2/3 cup sugar
Creme Anglaise Ingredients:
 1 cup heavy cream
 2 teaspoons vanilla extract
 4 egg yolks
 1/3 cup sugar

Melt the chocolate and butter together using a double broiler or microwave.

Whisk the egg yolks and the sugar until the mixture is light yellow. Whisk in a little chocolate / butter mixture to temper the eggs, and then slowly stir in the rest of the chocolate.

Beat the egg whites until stiff peaks form and fold into chocolate / egg mixture.

Pour the mixture into a greased springform pan and bake at 350 degrees for 20-25 minutes.

Heat the cream and vanilla in a saucepan until bubbles form on the edges.

Whisk egg yolks and sugar together until smooth. Pour a little bit of the hot milk into the egg mixture and whisk to temper. Add egg mixture to the saucepan and whisk constantly. Cook and stir constantly until the mixture gets thick (it will begin to look like pudding.)
