Combine the peanuts and honey and stir to coat the peanuts. Roast the peanuts at 300 degrees for 15 or 20 minutes. Let cool for five minutes and then add to your food processor.
Process until smooth. You’ll have to scrape down your food processor a few times, but it should come together pretty easily.
When the peanuts have turned into peanut butter, add the cinnamon, salt and vanilla extract and process until combined.
Dump the peanut butter in a separate bowl and fold in chopped dates.
