Indian Chicken Stew Recipe

Ingredients

 1 lbs. Chicken
 1 medium Potato
 1 medium Carrot -
 1/2 cup Green peas
 1 medium Onion
 5 Green chilies
 1 1/2 tbsp. Ginger
 3 Cardamoms
 3 Cloves
 1 piece Cinnamon stick
 1/2 tbsp. Pepper
 1/4 tsp. Fennel seeds
 1 can (13 oz. Coconut milk
 1 tbsp. Cashew powder
 Curry leaves
 Oil
 Salt

Directions

Heat oil in a pan and splutter cloves, cinnamon, bruised cardamom, fennel seeds and pepper. Soften the onion, slit green chilies, curry leaves and julienned ginger. You don't have to brown the onion.

Once the onion softens add the chicken with the potatoes(Refer notes). Take 1 cup of coconut milk and dilute this 2 parts of water.Once it cooks half way through add the carrots and peas. Cover and cook.

Once its almost done add rest of the coconut milk and cashew powder. The gravy tends to thicken after cooking. So turn off the heat once the desired consistency has reached. Serve hot.
