Irish Bread Recipe

Ingredients

 5 cups flour, sifted
 1 cup sugar
 1 tablespoon baking powder
 1 teaspoon baking soda
 1½ teaspoon salt
 8 tablespoons butter
 2½ cups buttermilk
 1 egg, slightly beaten
 2½ cups seedless raisins
 3 tablespoons caraway seeds
 1 tablespoon sugar
 1 tablespoon buttermilk

Directions

Sift flour, 1 cup sugar, baking powder, baking soda and salt.

Cut in butter until texture is coarse. Add 2½ cups buttermilk and egg to dry mixture, along with raisins and caraway seeds, blending only until moistened.

Generously grease a large, heavy iron skillet. Turn batter into skillet. Bake at 350° for 1 hour or until firm and browned.

Remove from oven.

Sprinkle with 1 tablespoon sugar and drizzle with 1 tablespoon buttermilk to form a crust as the bread cools.

Cool on the wire rack.
