Lemon Poppy Seed Muffins Recipe

Ingredients

 2 cups all-purpose flour
 2 teaspoons baking soda
 1/2 cup butter, softened
 1 teaspoon lemon zest
 2/3 cup sugar
 2 eggs
 4 teaspoons poppy seeds
 1/2 cup milk

Preheat oven to 375 degrees.

Sift the flour and baking soda.

Cream the butter, zest, and sugar for two minutes, until fluffy.

Add the eggs one at a time. Stir in the poppy seeds.

Using a spatula, fold in 1/3 of the flour. Stir to combine. Add half the milk and stir. Repeat until everything is combined.

Bake for 25 minutes or until slightly brown on top.
