Palak Khichdi Recipe

Ingredients

 1.5 cups chopped palak
 1 cup khichdi rice
 ¼ cup moong dal
 1 tomato chopped
 1tblsp chopped ginger
 1 green chili
 1 tsp cumin seeds
 1 tsp red chili powder
 1 tsp coriander powder
 1tsp ground cumin powder
 2.5 cups water
 Salt to taste
 2 tblsp ghee

Directions

Wash and soak rice and dal in water for 30 minutes.

Heat ghee in a kadai and add ghee.

Add cumin seeds, onion, green chili and ginger. Cook for 5-7 minutes and add palak.

Cook for two minutes and add rice dal with 2.5 cups of water. Add salt and chili.

Cook covered on medium flame till water is absorbed and khichdi is cooked.

When done turn off the flame and sprinkle ground cumin powder on top.

Enjoy hot with yogurt or achaar.
