Clean and marinate the chicken with pepper, 1/2 of the turmeric, salt, ginger garlic paste. Set aside for half hour.
In a pan heat oil and brown the onion. Add the shallots and cook till it's caramelized. Add the curry leaves and cook for a minute. Now add the finely sliced ginger and garlic and cook for a minute or two. Add salt as necessary.
Mix the chili, turmeric, coriander, cumin, garam masala and meat masala powders using 2 tbsp of water. Add this to the pan and cook until oil appears on the sides.
Add the marinated chicken and coat it with the masala. After a few minutes add about 1/2 cup of hot water. Close with a lid and cook on a medium flame until the chicken is tender and the curry has a semi-gravy consistency.
Serve hot with rice, pulav, roti, paratha etc.
