Soak rice noodles in hot water for 10 minutes and drain. Heat oil in wok, coating the sides well.
Brown garlic pieces in hot oil, remove and discard. Cook meat and remove to a bowl.
Cook raw veggies one at a time until 1/2 done and remove to a bowl.
Return meat and all veggies to the wok; add bamboo shoots, rice noodles and oyster sauce. Stir together only enough to heat thoroughly without cooking the vegetables. May serve with cooked rice.
