Tomato Corn Salsa Recipe

Ingredients

 2 cups corn shaved from the cob
 7-9 Roma tomatoes, diced
 1/2 cup cilantro, chopped, to release the flavor
 3 garlic cloves, minced
 2 jalapenos, diced
 salt, black pepper to taste

Directions

Blanch the corn in rapidly boiling water for 4-5 minutes, drain.

Mash tomatoes with a potato masher, add salt.

Then in a bowl, combine the corn with the tomatoes, and all the remaining ingredients. For preservation at add a teaspoon of apple cider vinegar.

Chill for 1 hour, and serve with blue corn tortilla chips, or as a heart topping for burritos and enchiladas.
