Vegan Cream of Mushroom Soup Recipe

Ingredients

 ¾ lb. oyster mushrooms, chopped
 ½ Vidalia onion, sliced thin
 2 cloves garlic, chopped
 1 small red bell pepper, sliced thin
 1 Tbsp. Earth Balance
 3 cup. vegetable broth
 2 Tbsp. all-purpose flour
 1 cup vegan sour cream
 1 Tbsp. thyme, chopped
 1 Tbsp. parsley, chopped
 1 Tbsp. kelp granules
 1 cup non-dairy milk
 sea salt (to taste)
 white pepper (to taste)

Directions

Sauté mushrooms, onions, garlic, and pepper in Earth Balance. Add vegetable broth and simmer for 45 minutes.

Add flour, sour cream, herbs, milk, salt, and pepper. Simmer 20 minutes until the soup thickens.
