Gochujang Spaghetti

In just 20 minutes, you can have a creamy, spicy pasta dinner ready to enjoy. The gochujang gives this simple weeknight meal a seriously satisfying flavor.

Ingredients
  

  • Pasta - spaghetti, linguine, fettuccine, etc.
  • Gochujang - about 3-4 tablespoons
  • Butter - 2-3 tablespoons, unsalted
  • Garlic - 2-3 cloves, minced
  • Heavy cream - around 1 cup
  • Parmesan cheese - 1/4 cup freshly grated
  • Salt and pepper - to taste
  • Green onions - sliced, for garnish
  • Red pepper flakes - optional garnish

Instructions
 

  • Cook the pasta. Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain the pasta, reserving about 1/2 cup of the starchy pasta water.
  • Make the sauce. In a large skillet, melt the butter over medium heat. Add the minced garlic and cook for 1 minute until fragrant. Stir in the gochujang until combined.
  • Simmer the sauce. Pour in the heavy cream and parmesan. Let the mixture come to a gentle simmer and cook for 2-3 minutes, stirring frequently, until thickened slightly.
  • Toss the pasta. Add the cooked pasta and a splash of the reserved pasta water. Toss everything together until the pasta is fully coated in the sauce.
  • Finish and serve. Remove from heat and stir in the sliced green onions. Season to taste with salt and pepper. Serve the gochujang spaghetti immediately, garnished with more green onions and red pepper flakes if desired.
