Gochujang Baked Potatoes
Baked potatoes topped with spicy pork and gochujang.
- 4 large baked potatoes
- 1 tbsp vegetable oil
- 1 lb ground pork
- 2 tbsp gochujang
- 1 tbsp soy sauce
- 3 garlic cloves, minced
- 1 large tomato, diced
- 1/4 cup cilantro, chopped
- 1/4 cup chives, chopped
- 1 cup shredded mozzarella
- 1/4 cup sour cream
Microwave or bake potatoes until tender.
Cook ground pork in oil. Stir in gochujang, soy sauce and garlic.
Slice potatoes open and top pork mixture, tomato, cilantro and chives.
Add mozzarella cheese and bake until melted.
Top with sour cream.
