Gochujang Smashed Potatoes

Gochujang Baked Potatoes

Baked potatoes topped with spicy pork and gochujang.

Ingredients
  

  • 4 large baked potatoes
  • 1 tbsp vegetable oil
  • 1 lb ground pork
  • 2 tbsp gochujang
  • 1 tbsp soy sauce
  • 3 garlic cloves, minced
  • 1 large tomato, diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup chives, chopped
  • 1 cup shredded mozzarella
  • 1/4 cup sour cream

Instructions
 

  • Microwave or bake potatoes until tender.
  • Cook ground pork in oil. Stir in gochujang, soy sauce and garlic.
  • Slice potatoes open and top pork mixture, tomato, cilantro and chives.
  • Add mozzarella cheese and bake until melted.
  • Top with sour cream.
