Gochujang Cheesy Potatoes

Baked potatoes filled with a gochujang-spiked cheese sauce.

Ingredients
  

  • 4 baked potatoes
  • 3 tbsp gochujang
  • 1/3 cup Greek yogurt
  • 2 scallions, thinly sliced
  • 1 tbsp lime juice
  • 1/4 tsp salt
  • 1 cup shredded cheese

Instructions
 

  • Bake potatoes until done. Slice open.
  • Mix gochujang, yogurt, scallions, lime juice and salt.
  • Spoon mixture into potatoes and top with shredded cheese.
  • Bake until cheese is melted.
