Gochujang Grilled Potato Skewers

Grilled potato skewers with a sweet and spicy marinade.

Ingredients
  

  • 1 lb potatoes, cubed
  • 3 tbsp gochujang
  • 2 tbsp vegetable oil
  • 1 tbsp rice wine vinegar
  • 1 tbsp brown sugar
  • 1 tbsp soy sauce
  • 1 garlic clove, minced
  • 1 tsp grated ginger

Instructions
 

  • Whisk together marinade ingredients.
  • Toss potatoes in marinade. Thread onto skewers.
  • Grill for 15-20 minutes, brushing with marinade, until charred and cooked through.
