Gochujang Mashed Potatoes

Mashed potatoes with flavor from gochujang and aromatics.

Ingredients
  

  • 2 lbs potatoes, peeled and cubed
  • 1/4 cup butter
  • 1/2 cup milk or cream
  • 3 tbsp gochujang
  • 1 garlic clove, minced
  • 2 scallions, thinly sliced
  • Salt and pepper to taste

Instructions
 

  • Boil potatoes until tender, then mash with butter and milk/cream.
  • Mix in gochujang, garlic, scallions, salt and pepper.
  • Garnish with extra scallions.
