Gochujang Mashed Potatoes
Mashed potatoes with flavor from gochujang and aromatics.
- 2 lbs potatoes, peeled and cubed
- 1/4 cup butter
- 1/2 cup milk or cream
- 3 tbsp gochujang
- 1 garlic clove, minced
- 2 scallions, thinly sliced
- Salt and pepper to taste
Boil potatoes until tender, then mash with butter and milk/cream.
Mix in gochujang, garlic, scallions, salt and pepper.
Garnish with extra scallions.
