Gochujang Mayo Recipe

- 1/2 cup mayonnaise (regular or Japanese Kewpie mayo)
- 1-2 tablespoons gochujang paste, to taste
- 1 teaspoon freshly squeezed lime or lemon juice (optional)
- 1/2 teaspoon toasted sesame oil (optional)
- 1/2 teaspoon garlic powder (optional)
- Salt and pepper to taste (optional)
Add the mayonnaise and gochujang paste to a small bowl. For a milder flavor, start with 1 tablespoon gochujang and add more to taste.
Add the lime or lemon juice, sesame oil, garlic powder, salt and pepper if using.
Whisk all ingredients together until fully incorporated and orange in color.
Taste and adjust seasonings as desired. Add more gochujang for more heat.
Serve immediately or store in an airtight container in the fridge for up to 1 week.
- Kewpie mayonnaise has a richer umami flavor compared to regular mayo, but both work well.
- For spicier mayo, gradually add more gochujang paste until desired heat level is reached.
- Gochujang mayo makes an excellent condiment for burgers, sandwiches, tacos, fries, nuggets, and more.
- If you don't have gochujang, you can sub sriracha or other chili pastes.
- Customize it by adding spices, herbs, garlic, sesame oil, vinegar, etc.
- Keep refrigerated and use within 1 week for best freshness.
