Gochujang Potato Soup

Ingredients
  

  • 1 lb potatoes, diced
  • 1 onion, diced
  • 2 garlic cloves
  • 4 cups vegetable broth
  • 1 cup milk or cream
  • 3 tbsp gochujang
  • Salt and pepper
  • Bacon bits
  • Scallions
  • Sour cream

Instructions
 

  • Simmer potatoes, onion and garlic in broth until tender.
  • Purée soup. Stir in milk or cream.
  • Season with gochujang, salt and pepper.
  • Top bowls with bacon bits, scallions and sour cream.
