Gochujang Smashed Potatoes
Crispy smashed potatoes topped with a spicy mayo.
- 1 lb small potatoes
- 1/4 cup olive oil
- 1 garlic clove, grated
- 1 tsp paprika
- 1 tsp gochugaru
- 2 tbsp gochujang
- 1/3 cup mayonnaise
- 1 tsp rice wine vinegar
- 1 tbsp sriracha
- 1 tsp sugar
- Chopped parsley, lemon juice, grated parmesan
Boil and smash potatoes. Toss with oil and seasonings.
Roast at 400°F for 30 minutes until crispy.
Mix mayo sauce ingredients.
Top potatoes with sauce and garnishes.
