Gochujang Smashed Potatoes

Crispy smashed potatoes topped with a spicy mayo.

Ingredients
  

  • 1 lb small potatoes
  • 1/4 cup olive oil
  • 1 garlic clove, grated
  • 1 tsp paprika
  • 1 tsp gochugaru
  • 2 tbsp gochujang
  • 1/3 cup mayonnaise
  • 1 tsp rice wine vinegar
  • 1 tbsp sriracha
  • 1 tsp sugar
  • Chopped parsley, lemon juice, grated parmesan

Instructions
 

  • Boil and smash potatoes. Toss with oil and seasonings.
  • Roast at 400°F for 30 minutes until crispy.
  • Mix mayo sauce ingredients.
  • Top potatoes with sauce and garnishes.
