Apple Rose Tarts 0 0 5 0

These mini apple tarts not only look amazing, they taste it too. We’ve made them by forming the apple slices into petal shapes so they look like roses.

They’re so easy to make and are super healthy and nutritious too. Hope you enjoy!

Add to favorites:

For the base:

100g/3.5oz ground almonds

50g/2oz gluten free oats (or another 1.15 cups/100g ground almonds)

60ml/2fl oz coconut oil

1 egg

1 tsp. vanilla extract

1 tsp. honey

For the strawberry layer:

200g/7oz strawberries

For the apple layer:

6 red apples, cored and finely sliced

1 tbsp. cinnamon

Juice from 1 lemon

1Preheat the oven to 160C/320F.

2Combine all the ingredients for the pastry in a large bowl and mix well, then set aside.

3Chop and de-stem the strawberries then add to a blender, blend until smooth.

4Grease 10 cupcake tins with coconut oil, then press in the pastry mixture. Push the mixture to the bottom of each tin then up the sides. The pastry should be about 1/4 cm thick.

5Bake for 20 minutes.

6While the pastry is baking - place the chopped apple slices into a bowl of cold water, then add the lemon juice and microwave for 3 mins.

7Leave the apples in the warm water for a few minutes (until softened), then drain and sprinkle the cinnamon on top.

8Remove the pastry from the oven and leave to cool.

9Once cooled - place a spoonful of strawberry puree into the bottom of each tart, then carefully place the apple slices on top. Start at the edges of the tart and work your way in to form roses.

10Place back in the oven for 30 minutes.

11Serve and enjoy! :)
