Beef Plov

Beef Plov Recipe

 300 g (10 oz. ) beef
 3 big carrots
 1 big onion
 2 cups medium grain rice
 2 teaspoons spice mix (red sweet pepper, barberry, cumin, turmeric, coriander )
 3 tablespoons sunflower seed oil
 2 teaspoons salt

Cut the beef into 2 cm pieces. Put them into the skillet, pour a cup of warm water and place on a low heat to stew for 1 ½ hour under cover, stir from time to time and add some water as it evaporates.

Meanwhile, peel the carrots and onion. Cut the carrots into sticks and the onion into semi-rings.

Add the veggies to the beef and let stew for 5 min more. Pour in the oil, add salt and spices, mix well.

Rinse the rice in warm water and put it over the veggies and meat evenly. Pour 3 ½ cups warm water, cover the skillet and let the plov simmer on high heat.

Thirty minutes after the water starts boiling, slightly reduce heat every 5-7 minutes for 20 minutes. Then continue cooking the plov on very low heat for an additional 10 minutes. Do not uncover the skillet during these 30 minutes. When the cooking time is up, remove the plov from the heat and let stand for 10 minutes. Now you can uncover the skillet and mix the rice with meat and veggies.
