Gingerbread Pudding Recipe

Ingredients

 3 cups cubed leftover gingerbread (stale is preferred)
 3 tablespoons minced crystallized ginger
 2 cups milk
 2 large eggs
 ¼ cup packed dark brown sugar
 2 tablespoons molasses
 1 teaspoon vanilla

Directions

Preheat oven to 325°F. Lightly grease a 9-inch baking dish.

Arrange gingerbread cubes and ginger evenly in prepared dish; set aside.

In a large bowl, whisk together milk, eggs, sugar, molasses, and vanilla.

Pour over gingerbread mixture; allow to sit 15 minutes.

Bake 45 to 50 minutes, until the middle of the pudding is set.

Remove and cool slightly. Serve with ice cream and a drizzle of molasses.
