In a saucepan, heat water over medium heat for 3-4 minutes, to bring it to a boil.
Stir in couscous and cover.
Remove from heat and let it stand for 5 minutes.
Fluff with fork.
Transfer to a bowl and let it chill for 10 minutes.
In the meantime, in a small bowl combine olive oil, vinegar, lemon juice and honey.
Add spinach leaves, red bell pepper, feta cheese, pine nuts and the dressing mixture to couscous.
Toss softly and serve immediately or refrigerate for 2 hours.
