Combine warm water, yeast, and 1 Tbl sugar into a large bowl, and allow to rest for 10 mintes so the yeast will bubble.
Meanwhile, combine the rest of the sugar, flour, and cocoa powder in a medium bowl.
After the yeast mixtures is bubbly, add egg and oil and stir gently.
Add flour mixture and mix well.
Then add the mini chocolate chips and knead by hand or with a stand mixer for a couple of minutes.
Allow the dough to rise in a warm place for 1 hour.
Punch down and form dough into whatever shape you so desire, and place it on a parchment lined baking sheet. Let rest for additional half hour.
Heat your oven to 350 during the last few minutes of the rising, and brush the egg wash onto your bread before putting it in the oven.
Bake for 28-30 minutes or until internal temperature reaches 175-180 degrees.
Serve warm with milk!
Once cooled, store it in a ziplock bag or cover with plastic wrap.
